The endive boats with chickpea hummus and cumin are an easy and quick appetizer to prepare and suitable for any occasion: it can also satisfy guests who follow a vegan or vegetarian diet, or who want just stay light.
They are ideal as an introduction to a nice hearty dinner or as a quick and healthy snack. Hummus is not a typical food of Western countries, but in the East they make great use of it and it is often flavored with cumin.

How to prepare endive boats
So let's see how to make these delicious vegan and healthy endive boats . Let's start with the list of ingredients for 4 people:
- a few leaves of endive (depending on how many boats you want to make and how much hummus you want to put)
- 250g of canned chickpeas (a drained can)
- 1 clove of garlic
- 1 lemon
- olive oil
- salt, as required
- cumin or other spices
To start, rinse the endive leaves thoroughly and place them to dry on a clean kitchen towel.
Then, remove the chickpeas from their water and drain them in a strainer. Pour them into a small bowl and add the lemon juice , the garlic to taste well minced, salt and even pepper if you wish ( I put it on because I like it!).
Then blend with a hand blender or in a mixer, adding the oil slowly. If necessary, add some water .
Now, stuff the endive leaves with a quantity of hummus of your choice (depending on how many boats you want to get). Flavor with cumin or parsley or other spices and leave to cool in the refrigerator.
The boats should be served cold !
