After gnocchi alla romana, this Friday we propose spaghetti with dried tomato pesto and pine nuts that can be really addictive.
It's a very easy recipe and also quick to make, but really really tasty and suitable for vegans,(if you don't grate grana padano on spaghetti before eating them!). You can replace pine nuts with almonds, hazelnuts or walnuts, depending on your taste in food.

Spaghetti with dried tomato pesto and pine nuts
Let's get started with the recipe.
It's extremely taste and it will need just few and cheap ingredients to make it.
Ingredients for 4/6 people
- 320-400g/11-14oz spaghetti
- 400-500g/14-17oz dried in oil tomato
- a tbsp pine nuts
- basil
- thyme
- marjoram
- grana padano (optional)
- a clove of garlic

- a mixer
- a large bowl
- a saucepan for spaghetti
Procedimento
First of all, let water boil, then add some coarse salt and the amount of spaghetti you want to eat.
in the meantime, prepare the pesto: pour dried tomato with their oil into a mixer, then add the garlic, the pine nuts and some basil leaves.Mix all the ingredients together and finally add thyme and marjoram. versare anche le spezie secche come timo e maggiorana.
If you want, add some grana padano or some pecorino.
When the pasta is cooked (it will take 10 minutes more or less) don't throw all of its cooking water away: we will use it to stir pasta together with tomato pesto in the bowl.
Now, pour pasta in a large bowl, add tomato pesto, a tablespoon or more of cooking water and stir it all together.
Serve spaghetti with dried tomato sauce with a basil leaf and maybe a sprinkle of grana padano or pecorino., a piacere.
Tips
To make a perfect dried tomato pesto, I recommend to pour both dried tomatoes and their oil inside the mixer,otherwise it may result too dry and less tasty.
Don't stir pasta and tomato pesto inside a hot pan. piuttosto versarla in una ciotola e mescolare insieme al pesto con un po’ di acqua di cottura.
